Ingredients
- For the topping
- 26 ozs Black cherry
- ½ lemon (juiced)
- 2 Tbsps sugar
- 1 tsp vanilla extract
- 2 Tbsps cornstarch
- For the pastry
- 1 egg
- butter
- Pastry flour
- 1 egg yolk
- 1 Tbsp milk
Preparation steps
For the pastry: pile flour on the work surface and make a well in the center. Cut butter into pieces and arrange around the well. Place sugar, salt and egg into the well and chop with a knife until crumbly. Knead with your hands to a smooth pastry and wrap in plastic wrap. Refrigerate for 30 minutes.

For the topping: rinse and pit cherries. Combine with lemon juice, sugar and cornstarch.
Roll out pastry to approximately 1/10 inch on a floured surface. Cut out a circle slightly larger than the pie dish. Line pie pan with pastry, making an edge all around. Cut strips from the remaining pastry. Spread cherries on top of the pastry, arrange pastry strips in lattice pattern on top of cherries. Whisk egg yolk with milk and brush pastry strips with the mixture. Bake in a preheated oven at 350°F for about 50 minutes or until golden brown.
Remove from oven and serve warm or cold with whipped cream, if desired.
