2 Tbsps olive oil
1 shallot (finely chopped)
1 clove garlic cloves (finely chopped)
1 tsp sugar
21 ozs ripe Cherry tomatoes (quartered)
2 Tbsps Tomato paste
3 ½ cups vegetable stock
salt
peppers
4 Tbsps Crème fraiche
To garnish

Preparation steps

1.
Heat the oil in a large pan and gently cook the shallots and garlic until softened. Sprinkle with the sugar and caramelise slightly.
2.
Add the tomatoes and cook for 5 minutes. Add the tomato paste and stock, bring to a boil, cover and simmer for 15 minutes.
3.
Coarsely mash or puree the soup and season with salt and pepper.
4.
Pour into serving bowls and drizzle over the creme fraiche in heart shapes. Serve garnished with basil.
