¼ cube fresh Yeast (approx 10 g)
500 milliliters lukewarm milk
1 tsp honey
4 eggs
1 pinch salt
200 grams Chestnut flour
2 Tbsps clarified butter
250 grams Crème fraiche
200 grams sliced Smoked salmon
Dill (for garnish)

Preparation steps

1.

Crumble the yeast into a bowl, add the milk and stir until dissolved. Stir in the honey, eggs and salt and stirring constantly, gradually add the flour. Cover and let rise in a warm place for 15 minutes.

Heat some butter in a skillet and working in batches, drop the blini batter by tablespoons into the skillet. Cook until golden brown on both sides. Repeat until all the batter is used.

3.

Stir the creme fraiche until smooth. Arrange the blinis on a plate, top with crème fraîche and the smoked salmon. Garnish with dill.
