- 32 ozs boneless, skinless Chicken breasts (cut into cubes)
- 2 Fennel bulb (cleaned and trimmed; cut into quarters)
- 2 tsps coarse salt
- freshly ground Black pepper (to taste)
- 1 Tbsp fresh oregano (chopped)
- 2 Tbsps good-quality olive oil
- 2 Tbsps freshly squeezed lemon juice
- 10 Skewer
Preparation steps

Thread the chicken onto eight skewers. Thread the fennel onto the remaining skewers. Season the chicken and fennel to taste with salt and pepper. In a small bowl, whisk together the oregano, olive oil and lemon juice. Brush the marinade evenly over the kebabs and the fennel. Marinate for about 20 minutes.

Preheat the grill to medium-high. Grill the chicken kebabs on all four sides for 3 to 4 minutes or until the chicken is cooked through. Place the skewered fennel on the grill and cook for about 4 minutes or until tender and fragrant. Divide among serving plates and serve.
