Ingredients
- For the pizza base
- 500 grams Bread flour
- 1 cube Yeast (42 g)
- salt
- 1 pinch sugar
- 250 milliliters warm water
- For the topping
- 2 Chicken breasts (160 g each)
- 2 large onions
- 2 garlic cloves (finely chopped)
- 1 small red chili pepper (seeded, finely chopped)
- 1 shallot (finely chopped)
- Cumin (per 1/2 tsp, crushed)
- cilantro (per 1/2 tsp, crushed)
- 3 Tbsps light soy sauce
- 6 Tbsps Coconut milk
- 2 Tbsps sesame oil
- salt
- freshly ground peppers
- 500 grams Yogurt (0.1% fat) (3.7% fat)
Preparation steps
For the topping, halve the chicken fillets lengthwise and cut into small slices.
Combine the remaining ingredients (except the large onions). Mix a marinade and marinate the meat strips for a few hours.
For the pizza base, mix the yeast with sugar and a little warm water. Stir until it has dissolved. Mix the flour with 1 teaspoon of salt and pour in the yeast and the remaining water.
Knead into a smooth dough. Add extra water or flour depending on the consistency of the dough. Leave the dough to rise in a warm place for 60 minutes.
Preheat oven to 250°C (approximately 475ºF).
Peel the onions and cut into wedges.
Place the dough on a floured work surface and roll out flat. Place on a baking sheet. Brush the dough with a little sesame oil.
Cover with the drained chicken slices and onions. Drizzle with the remaining marinade.
Bake in the oven for about 20 minutes until golden brown.
Cut the pizza into slices and spoon a tablespoon of yogurt onto each one.
Serve garnished with coriander leaves.
