Ingredients
- For the tomato dip
- 600 grams Tomatoes
- 1 onion
- 1 garlic clove
- 2 Tbsps olive oil
- 5 Tbsps White vinegar
- salt
- freshly ground peppers
- sugar
- 1 Tbsp freshly chopped Basil
- For the skewers
- 1 handful Fresh herbs (Sage and rosemary)
- 600 grams Chicken breasts
- 400 grams Cherry tomatoes
- 3 Tbsps olive oil
Preparation steps
For the tomato dip: blanch tomatoes in hot water, rinse in cold water and peel. Quarter and remove seeds, cut into small cubes. Peel onion and garlic and chop finely. Heat oil in a pan and saute onion and garlic until translucent. Add tomatoes and saute briefly, add vinegar and simmer for about 20 minutes on medium heat. Season with salt, pepper and a pinch of sugar to taste. Add finely chopped basil and cool.
For the chicken skewers: rinse herbs, shake dry and chop finely. Rinse chicken breasts, pat dry and cut into 2 cm (approximately 3/4 inch) cubes. Rinse tomatoes and thread chicken and tomatoes, alternating, on wooden skewers. Heat olive oil in a pan and add herbs, cook skewers for about 7-9 minutes, turning often. Arrange skewers on plates and serve accompanied by tomato dip.
