- 3 garlic cloves
- 1 Tbsp honey
- 1 Tbsp balsamic vinegar
- 1 organic Lime (zested)
- cayenne pepper
- salt
- 600 grams chicken
- 4 Cinnamon stick
- 500 grams Tomatoes
- 3 sprigs thyme
- 3 Tbsps olive oil
- 1 Tbsp sugar
- 2 generous pinches ground saffron
- freshly ground peppers
- 3 Tbsps butter
Preparation steps
Peel garlic. Mix honey, balsamic vinegar, lime zest and juice. Season with cayenne pepper and salt and squeeze in the garlic through a press.
Cut chicken into bite-sized cubes. Thread onto cinnamon sticks. Place in a baking dish, drizzle with marinade, cover and let stand for about 20 minutes.
Rinse tomatoes. Rinse thyme, shake dry, and strip leaves from the branches.
Heat oil in a pot, add tomatoes, sprinkle with sugar and caramelize for 1-2 minutes while stirring. Remove tomatoes from the pot. Add 3-4 tablespoons of water and bring to a brief boil. Add thyme and saffron. Return the tomatoes to the pot and season with salt and pepper.
Heat butter in a large skillet and cook the chicken skewers over low heat for about 5 minutes on each side. Serve with the tomatoes.
