1 ½ kilograms Chicken wing
salt
freshly ground peppers
vegetable oil (for the baking sheet)
1 Orange
4 Tbsps red Chili sauce (for chicken)
1 fresh ginger (walnut-sized piece)
1 Tbsp light soy sauce

Preparation steps

1.

With scissors, cut off wing tips. (reserve for another use)

2.

With a sharp knife, cut chicken wings through the joints to separate.

3.

Season wings with salt and pepper. Transfer to an oiled baking sheet. Bake in preheated oven (220°C or approximately 425°F), turning once halfway through baking time, 20-25 minutes. 

4.

Meanwhile, squeeze the juice from the orange. Mix juice with chili sauce. Rinse, trim and finely chop scallions.

5.

Peel and finely chop ginger.

6.

Stir scallions, ginger and soy sauce into chili sauce.

7.

Remove chicken wings from the oven and place in a large bowl. Toss with 1-2 tablespoons chili sauce.

8.

Serve chicken wings with remaining chili sauce.
