3 Tbsps light soy sauce
2 Tbsps Nut oil
1 ⅔ cups Chicken legs (meat)
¾ inch fresh ginger
1 clove garlic cloves
1 tsp Corn starch
cayenne pepper
8 chinese Cabbage
2 Tbsps Sesame seeds (toasted)

Preparation steps

Whisk the eggs with 1-2 tbsp soy sauce. Heat a little oil in a frying pan and fry 4 thin omelettes: add 1/4 of the egg to the pan, fry for 1-2 minutes until golden then toss and finish cooking on the other side. Remove from the pan and cook the remaining omelettes in the same way. Stack the omelettes and leave to cool.

Put the meat, ginger and garlic in a food chopper. Add the cornflour and blend to a fine purée. Season with salt and cayenne pepper.

Spread each omelette with the chicken mixture and roll up. Cut into slices roughly a finger thick.

Lay the cabbage leaves in the base of 4 small bamboo steamers. Arrange the slices on top, sprinkle with sesame seeds, cover and steam for around 15 minutes. Serve with a soy sauce dip if desired.
