- 750 grams Ground beef
- 2 onions
- 3 garlic cloves
- 1 stalk Celery
- 1 red chili pepper (to taste)
- 6 Tbsps vegetable oil
- 500 milliliters Beef broth
- 1 can peeled Tomatoes
- 250 grams thick white Beans (canned, drained)
- 1 can Corn (drained)
- ½ tsp Cumin (ground)
- 2 sprigs Lemon thyme (fresh)
- salt
- freshly ground peppers
- Also
- Pepperoncini (fresh, garnish, yellow and red)
- 400 grams Sour cream (for serving)
- 4 large Corn tortilla
Preparation steps
1.
Peel onions and garlic and finely chop. Rinse chile pepper, cut in half, remove seeds and finely chop. Rinse celery, trim and chop.

Heat a little oil in a very large pan and brown meat in portions until crumbly. Add remaining oil to pan along with thyme and a little broth. Simmer for 10-20 minutes or until liquid has evaporated. Stir in onion, chile pepper, garlic and celery.

Pour in tomatoes (don't drain) and remaining broth. Cover and simmer on low heat for 30 minutes.

Add corn and beans. Season with salt, pepper and cumin. Simmer for another 15 minutes.
5.
Serve in corn tortillas with sour cream to taste. Garnish with peperoncini.
6.
Serve with white bread if desired.
