5 ¼ ozs Powdered sugar from Raw cane sugar
1 ¼ ozs honey (+ 2 tablespoons for brushing)
1 pinch salt
3 ½ ozs Whole grain Rice flour
9 ozs Spelt flour (Type 630 + 2 tablespoons for processing)
8 ¼ ozs ground peeled almonds
2 ½ ozs peeled almonds

Preparation steps

Separate eggs (use egg yolks elsewhere). Mix egg whites with powdered sugar, 1.75 ounces honey and 1 pinch of salt. Gradually add rice flour, 8.8 ounces spelt flour, and ground almonds and knead everything into a smooth, malleable dough; add cold water or flour as needed. Form into 2 rolls and chill for 30 minutes or place in the freezer.

Cut rolls into slices about 1⁄4 inch thick. Press 1 floured almond into the center of each, press a pattern around the almond with a fork, and place on a baking sheet lined with parchment paper. Mix remaining honey with 2 tablespoons water and brush onto cookies. Bake in a preheated oven at 200 °C / 400 °F for 8-10 minutes until golden brown. Remove from the tray and allow to cool.
