Chocolate-Date Cake
Ingredients

- 300 grams pitted Date (chopped)
- 175 grams soft butter (plus more for the pan)
- 2 Banana
- 1 Tbsp Vanilla sugar
- 3 eggs
- 75 grams cornstarch
- 75 grams Pastry flour (plus more for the pan)
- 50 grams cocoa powder
- 1 tsp Baking powder
- 50 grams Pecan
- 50 grams ground almonds

- 200 milliliters Whipped cream
- 1 Orange
- Orange juice
- cinnamon
Preparation steps
In a small saucepan, simmer the dates with water to cover, stirring occasionally until very tender, about 10 minutes. Remove from heat, drain and transfer to a bowl to cool.
Preheat the oven to 180°C (approximately 350°F) convection. Butter and flour a 10-inch springform pan and line the bottom with parchment paper.
Mash the bananas. Add the softened butter, the mashed bananas, vanilla sugar and eggs to the dates and stir until a well combined and creamy. Stir together the cornstarch, flour, cocoa powder and baking powder and add to the date mixture and mix well. Stir in the nuts.
Pour the batter into the pan and bake 30 minutes, then cover with aluminum foil and bake until a wooden pick inserted in the center comes out clean, 25-30 minutes. Allow to cool in the pan.
To serve, whip the cream until stiff. Peel the orange, slice and halve the slices. Release the sides of the pan. Cut the cake into pieces and top each a dollop of cream and pieces of orange. Drizzle to taste with a little orange juice and sprinkle with cinnamon.
