- 1 jar Pear
- Red wine
- 1 pkg Mulled wine
- 50 grams Walnut
- 75 grams Dark chocolate
- 5 Tbsps milk
- 200 grams butter
- 175 grams sugar
- 1 packet Vanilla sugar
- 1 pinch salt
- 3 eggs
- 200 grams Pastry flour
- 75 grams cornstarch
- 20 grams Cocoa
- 1 packet Baking powder
- 2 Tbsps Pear brandy
- 150 grams or 5. ounces of milk and Dark couverture chocolate
- 10 grams Coconut oil
Preparation steps
Heat pears and red wine over low heat. Add mulled wine and let stand for 5 minutes. Remove bag and let rest for another hour. Drain pears and cut in half. Chop walnuts.
Coarsely chop chocolate. Heat milk and add chocolate. Beat butter and sugar until fluffy. Add with vanilla sugar and salt. Stir in eggs, one-by-one. Combine flour, cornstarch, cocoa and baking powder. Fold dry ingredients into batter, then add chocolate and walnuts.
Grease 2 springform pan with butter and dust with breadcrumbs. Pour batter into pans and top with pears, reserving 4 pieces for garnish.
Bake in an oven preheated to 175°C (approximately 350°F) for 50 minutes. Remove and let cool, then remove from pans and place on a wire rack. Prick with a fork several times and brush with pear brandy, let cool completely.
Melt chocolate and coconut oil over a double boiler. Coat cakes with chocolate and let dry. Use stencils, cocoa and icing sugar to decorate. Serve garnished with pears.
