9 ozs Greek yogurt
3 Tbsps sugar
8 ozs Raspberries
8 ozs Ladyfinger
3 ozs Chocolate shaving
1 oz chopped Pistachio

Preparation steps

1.

Brew coffee, stir in vanilla extract and chill for at least 1 hour.

Rince lemon in hot water and pat dry. Zest (about 1 tablespoon) and juice. Beat mascarpone and yogurt until smooth. Add sugar. Stir in lemon zest and 2-3 tablespoons juice. Rinse and pat dry raspberries.

Line a loaf pan, about 30x20 cm (approximately 12x8 inches), with ladyfingers. Brush coffee mixture onto ladyfingers. Top with about half the cream, sprinkle half of the raspberries and about 40 grams (approximately 1 1/2 ounces) of grated chocolate. Lay another layer of ladyfingers and brush with remaining coffee. Spread remaining cream on top and chill for at least 4 hours, preferably overnight.

Top with remaining raspberries and remaining grated chocolate. Garnish with pistachios and serve.
