1 pc organic Orange peel
4 Tbsps sugar
100 grams Dark chocolate (or couverture)
2 eggs
1 pinch salt
1 egg yolk
1 Tbsp Pastry flour

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Brush 250ml (approximately 8 ounce) ramekins or  with the butter and sprinkle evenly with the sugar.

In a saucepan, bring the milk with the cocoa powder, orange peel and 2 tablespoons sugar to a boil. Meanwhile, chop the chocolate.

Remove the milk from the heat and remove the orange peel. Add the chocolate and stir until melted.

Separate the eggs. In the bowl of an electric mixer, beat the egg whites with the salt until stiff, gradually add the remaining sugar and beat until stiff and shiny. Stir the yolks and the flour into the chocolate mixture. Fold in the egg whites and spoon the chocolate mixture into the prepared ramekins.

5.

Place these in a large ovenproof baking dish. Pour hot water to come halfway up the sides of the ramekins and bake on the lower shelf of the oven until set, about 20 minutes.

6.

Sprinkle with powdered sugar and serve immediately.
