300 grams powdered sugar
2 Tbsps lemon juice
2 tsps Ground cinnamon
350 grams blanched, ground almonds

Preparation steps

1.

Beat the egg whites with the salt until stiff. Continue beating, while adding the icing sugar 1 spoonful at a time, until stiff and glossy. Beat in the lemon juice. Reserve 3-4 tablespoons of the meringue mixture for glazing. Gently fold the cinnamon and almonds into the egg white mixture until thoroughly combined.

Dust the work surface with the almonds. Roll the dough to 6-8 mm (approximately 1/4 inch) thick. Cut stars and place on a parchment-lined baking sheet. Brush the stars with the reserved meringue mixture.

Allow to dry overnight at room temperature.

Preheat the oven to 120°C (approximately 250°F).

Bake until dry, about 25 minutes. Cool on the baking sheet before serving.
