2 shallots (finely chopped)
1 clove garlic cloves (finely chopped)
2 red peppers (deseeded and chopped)
¾ cup black Olives (pitted)
4 preserved lemons (roughly chopped)
lemon juice (from 1 lemon)
2 Tbsps fresh cilantro (chopped)

1 Fine grater, 1 Citrus juicer, 1 Tablespoon, 1 Teaspoon, 1 Large knife, 1 Small knife, 1 großer Pot, 1 Slotted spoon, 1 Bowl, 1 Cutting board, 1 Toothpick oder andere Holzspieße

Preparation steps

1.
Cook the couscous according to packet instructions, fluff with a fork and keep warm.
2.
Heat the oil and cook the garlic and shallots until translucent. Add the chopped lemon, red pepper and olives and stir briefly. Transfer to a bowl and mix with the lemon juice.
3.
Season well with salt and pepper, mix in the chopped coriander and carefully stir in the couscous. Leave to stand for at least 1 hour before serving.
