- 600 grams Chicken breasts
- salt
- freshly ground peppers
- 2 Tbsps Lime juice
- 3 Tbsps Pastry flour
- 1 handful cilantro
- 2 eggs
- 80 grams Shredded coconut
- 60 grams Panko
- vegetable oil for frying (or peanut oil)
Preparation steps

Rinse chicken, pat dry, cut into bite-size pieces, sprinkle with lime juice and season with salt and pepper. Pour flour into a shallow bowl and coat chicken pieces in flour. Rinse cilantro, shake dry, pluck leaves from stem and cut into fine strips. Whisk eggs together in a bowl with cilantro leaves. Mix shredded coconut in another bowl with panko crumbs. Cover chicken pieces with egg mixture and then coat with coconut crumbs. Heat oil in a saucepan and fry breaded chicken pieces in portion for 3-4 minutes until golden brown. Remove from oil with a slotted spoon, drain on paper towel and serve.
