Preparation steps

1.

Toast sunflower seeds in a dry nonstick skillet, stirring, so they do not burn! Rinse endive, drain and cut into 1 to 2 cm (approximately 1/2- to 3/4-inch) wide strips.

Rinse, core and cut tomatoes into pieces. Rinse radishes and trim ends. Cut radishes into eighths. Rinse and drain cress.

In a large bowl, mix lemon juice with an equal amount of water. Whisk in honey and mustard and season with salt, sugar and pepper. Halve and remove pits from avocados. Scoop out flesh and cut into bite-size pieces. Immediately add avocado to lemon dressing and let marinate.

4.

Carefully fold in endive, chopped tomatoes and radishes. Sprinkle salad with cress and sunflower seeds.
