1 onion
1 garlic clove
800 milliliters Beef broth
4 Tomatoes
250 grams starchy potatoes
400 grams chickpeas (canned)
1 sm can Saffron
salt

Preparation steps

1.

Cut the chorizo into slices. Peel the onion and garlic and chop finely. Brown the sausage in a pan for 1-2 minutes and then remove from the pan. Fry the onion and garlic in the residual fat until translucent and then deglaze with the broth. Blanch the tomatoes in boiling water, plunge into an ice water bath, peel off the skin and cut into pieces. Peel and dice the potatoes. Rinse the chickpeas, drain and add to the soup with the tomatoes and potatoes. Simmer for about 30 minutes half covered, stirring occasionally. Stir in the saffron in the last 5 minutes of cooking.

Add the chorizo to the soup and season with salt and pepper.

Distribute into bowls and serve sprinkled with parsley.
