Coq Au Vin

- 1 chicken (About 1.2 kg)

- 2 onions
- 2 carrots
- 2 stalks Celery
- 60 grams Bacon (sliced)
- 1 tsp peppercorns
- 4 Juniper berries
- 2 Tbsps butter
- 1 garlic clove (peeled)
- 200 milliliters French Red wine (such as Burgundy)
- 200 milliliters chicken stock
- 1 bay leaf
- 2 thyme
- parsley
- 150 grams Pearl onion
- 150 grams Chanterelle
Preparation steps
Step 1:
Cut bacon into strips and slowly fry in a hot pot.
Step 2:
Peel onions, celery and carrots. Cut onions into strips. Cut celery and carrots into slices.
Add half of prepared vegetables to the pot, fry briefly and deglaze with half of chicken stock and red wine.
Step 3:
Add remaining vegetables, garlic, bay leaf, thyme, juniper berries and peppercorns to the pot. Mix with remaining wine and stock and simmer.
Step 4:
Rinse chicken, pat dry, cut into 6 pieces and season with salt and pepper.
Step 5:
Place chicken on vegetables, cover and simmer for about 30 minutes.
Add parsley.
Step 6:
Trim chanterelle mushrooms. Melt butter in a pan and sauté mushrooms briefly. Add onions and chanterelles to the pot, mix with chicken and simmer for another 10 minutes.
Season to taste and serve.
