2 pink Grapefruit
½ pomegranate
2 Avocados
salt

4 tsps flaxseed oil
6 eggs
¼ tsp Red pepper flakes
2 Tbsps olive oil
2 ¾ ozs Cottage cheese
1 handful parsley
4 ozs Whole Wheat Bread (4 small slices)

Preparation steps

1.

Peel grapefruits so that all white is removed. Cut out fruit fillets between the separating skins, collecting juice and squeezing the rest of the fruit well. Remove pomegranate seeds from fruit. Cut avocados in half, remove stones, lift flesh from skins and cut lengthwise into wedges.

Arrange grapefruit fillets and avocado wedges on large plates. Whisk the collected grapefruit juice with salt, pepper and linseed oil and drizzle over the top. Sprinkle pomegranate seeds on top.

Beat eggs in a mixing bowl with 2 tablespoons water and season with salt, pepper and chili flakes. Heat oil in a large frying pan. Cook egg mixture over medium heat for 5 minutes. Spread cottage cheese in flakes on top, stir gently and allow to set for another 1 minute.

4.

To serve, wash parsley, shake dry and chop. Arrange scrambled eggs next to salad, sprinkle with parsley and add slices of bread separately.
