2 shallots
1 Tbsp butter
1 Tbsp Pastry flour
1 l Vegetable broth
l Whipped cream
1 Tbsp lemon juice

2 Tbsps scallions

Preparation steps

Rinse and peel the asparagus, cut off the woody ends and cut into small pieces. Bring the vegetable broth to a boil, add asparagus, reduce the heat and simmer for 20 minutes on low heat. Drain the asparagus, reserving the broth. Puree the asparagus with a hand blender.

Peel and finely chop the shallots.

Melt the butter in a saucepan, stir in the flour and shallots. Sauté briefly, then gradually stir in the broth and simmer for about 10 minutes. Stir in the asparagus puree and the cream, season with salt, pepper, and lemon juice. To serve, pour the soup into bowls and garnish with chives.
