1 Cauliflower (about 750 grams)
1 onion
1 Tbsp parsley (chopped)
1 Tbsp olive oil
750 milliliters Vegetable broth
200 grams Whipped cream
salt
freshly ground peppers
2 Tbsps Orange juice
2 tsps Curry powder
4 Tbsps Crème fraiche
Pumpkin seed (for garnish)
scallions (for garnish)

Preparation steps

Cut the cauliflower into florets. Peel and chop the onion. Heat olive oil in a pan and saute the cauliflower and the onion in it while stirring. Add the parsley, pour in the vegetable broth and boil for about 20 minutes. Puree the soup with an immersion blender, stir in the cream and bring to a boil. Season with salt and pepper, and stir in the curry powder and orange juice.

Divide the soup equally into bowls, top with a little creme fraiche and serve sprinkled with pumpkin seeds and green onions.
