200 grams Pork (ready for cooking)
200 grams untrimmed Pork ribs
1 ½ liters Beef broth
1 onion
2 garlic cloves
1 green Bell pepper
250 grams Pumpkin
1 green plantain
1 Cassava
1 medium-sized Sweet potato
2 carrots
1 fresh Corn
2 Tbsps vegetable oil
1 Tbsp Tomato paste
salt
2 Tbsps lemon juice

Preparation steps

Add beef, pork and pork chops to a large pot with broth, bring to a boil and cook for about 1 hour until meat is tender. Peel onion and garlic, trim, chop onion and press garlic. Rinse bell peppers, cut in half, trim and cut into small cubes. Peel pumpkin, plantains, cassava, sweet potatoes and carrots and cut all into pieces. Remove husks from corncobs defoliate and cut into 2 cm (approximately 1 inch) thick slices.

Heat oil in a large frying pan, sauté onion, garlic, paprika, tomato paste and salt briefly and add cooked meat. Add pumpkin, plantains, cassava, sweet potatoes, carrots and corn and season with lemon juice. Cover pot and let cook over low heat for about 1 hour. To serve, cut meat into bite-size pieces and add back into the stew.
