200 grams Margarine (or butter)
4 eggs
350 grams Pastry flour
1 Tbsp Rum
1 packet Vanilla sugar
Baking powder
150 milliliters water
4 Kiwi
500 grams Vanilla ice cream

Preparation steps

1.

Rinse the lemon and pat dry. Finely grate the zest from 1/2 the lemon then peel the remaining zest with a vegetable peeler and julienne.

2.

For the waffles: Whisk the melted butter, sugar, eggs, flour, rum, vanilla sugar, baking powder, finely grated lemon zest and water until smooth.

3.

Cook on a waffle iron until golden brown on both sides. Let cool on a wire rack.

4.

Peel the kiwis and slice. Arrange 1/2 the waffles on serving plates. Top with the kiwis and then scoop the ice cream over top. Sandwich with the remaining waffles.

5.

Serve sprinkled with the julienned zest.
