2 Chicken breasts
½ lemon (juice)
4 Tbsps olive oil
1 bunch Arugula
salt

12 slices Ciabatta

Preparation steps

Bring broth to a boil, add chicken meat, cover and allow to simmer for about 8 minutes over low heat. Remove, let cool slightly and dice. Then chop finely in a food processor along with lemon juice, oil and about 4 tablespoons of the broth. Trim arugula, rinse, finely chop and mix with the chicken mixture. Season with salt and pepper to taste.

Toast bread or broil in the oven (watching carefully to avoid over browning). Coat bread slices with the chicken spread and garnish with arugula.
