- 1 stalk Whole-grain baguette
- 1 garlic clove
- 250 grams Quark
- 100 grams Crème fraiche
- 2 Tbsps scallions
- 2 Tbsps chopped fresh parsley
- salt
- freshly ground peppers
- 250 grams green Asparagus
- 1 Kohlrabi
- 8 baby carrots
- 150 grams Snow peas
- To garnish
- Chives
- Chervil
- parsley
- Borage flower
Preparation steps
1.
Cut the bread into slices and toast. Press the garlic.

Mix the quark, crème fraîche, chives, parsley, and pressed garlic together. Season with salt and pepper and spread on the bread. Peel the vegetables, cut into bite-sized pieces and blanch for about 2-3 minutes in boiling salted water. Place in ice water and drain. Arrange vegetables on bread slices. Top with garnishes and serve.
