Preparation steps

1.
Using a potato peeler, remove strips of the cucumber peel at even intervals. Cut eight thin slices of the cucumber and set aside for the garnish.
2.
Cut the rest of the cucumber in half lengthways and remove the seeds. Cut the cucumber into chunks and place in a blender with the buttermilk. Blend until smooth then pour into four glasses.
3.
Thread the cucumber slices onto cocktail sticks and place on top of the glasses. Garnish with the dill sprigs and serve immediately.
