Preparation steps

Rinse cilantro and pluck the leaves from the stems. Blanch the cilantro stems in a pot of simmering water until soft, about 1-2 minutes. Remove from water and set aside. Peel and chop the cucumbers. Place the cilantro water, cilantro leaves and cucumber in a blender, and puree until smooth. Season with the salt, pepper and lime juice to taste. Place the mixture in a bowl and refrigerate.

Moisten the rice paper with cold water. Cut the tuna into 4 pieces and place each on top of a rice paper sheet. Season the tuna with the wasabi powder and salt to taste, and wrap with the rice paper. Allow to dry for 15 minutes.

Fill a pot with the frying oil and heat to 170°C (approximately 350°F). Add the tuna and cook until light golden. Remove with a slotted spoon and drain on paper towels. Wrap each piece of tuna with a cilantro stalk. 

Serve the cucumber mixture in small shot glasses. Place a piece of tuna on top and serve garnished with the cilantro leaves.
