Kale is known as one of the world's healthiest foods because of its high nutritional content. It is very high in vitamins, minerals, antioxidants, and fiber, so it is a great super food to include in your diet.
Serve with a side of bread and if you want more protien, you can add chicken or sausage to the soup.

- 3 Tbsps Avocado oil
- 1 onion (finely chopped)
- 2 carrots (peeled and finely diced)
- 2 sticks Celery (finely diced)
- 1 Bouquet garni
- 2 cups tomato passata (or chopped tomatoes)
- 2 cups canned cannellini beans (drained and rinsed)
- 4 cups low-sodium vegetable stock
- 2 cups curly Kale (chopped)
- gluten-free bread (to serve)
- 1 cup (dairy-free) Cheese (grated)
- salt
- freshly ground peppers
Preparation steps

Heat the oil in a large saucepan set over a moderate heat until hot. Add the onion, carrot, celery, bouquet garni, and a little salt.

Cook for 4 - 5 minutes, stirring occasionally, until softened and translucent. Cover with the passata, beans, and stock, stirring well.

Cook until simmering and then reduce the heat to low and continue to cook for a further 25 - 30 minutes until the beans are tender.

Once the beans are tender, stir in the kale and cook for a further 5 minutes until tender. Adjust the seasoning to taste.

Heat the grill to hot. Top slices of bread with a little cheese and seasoning. Grill for a minute until the cheese is melted. Serve the crostini alongside bowls of the soup.
