3 Tbsps clarified butter

Preparation steps

Rinse the potatoes and boil them for about 30 minutes. Then peel, allow to cool and cut into pieces.

Peel and quarter the apples, remove the cores and also cut into pieces. Cut the bacon into strips.

Peel the onion and sauté together with the bacon in some butter for about 2 minutes. Add the potatoes and fry for about 5 minutes. Finally, add the apples and cook together for about 10 minutes. Season with salt and pepper.

Rinse the cutlets and pat dry. Crush the pepper in a mortar and mix with the mustard. Rub into the cutlets and sear gently for about 12 minutes in some butter. Cook until golden brown on both sides, occasionally brushing with more butter. Season with salt.

Peel and halve the garlic and add to the pan, along with the thyme, during the last 5 minutes of cooking.

Transfer to plates and serve with the potatoes.
