Preparation steps

Peel the daikon radish, slice into thin slices. Trim the radish, rinse and halve smaller specimens; cut larger radish slices. Rinse the celery, remove any threads and cut stalks into thin slices. Rinse the greens, pat dry and chop. For the vinaigrette, combine vinegar, both oils, chives and a pinch of sugar, season with salt and pepper to taste.

Toss all salad ingredients with vinaigrette, let stand briefly and serve distributed on saucers.
