Dried Cod Sicilian Style

- 400 grams Stockfish
- salt
- 200 grams Pine nuts
- 3 garlic cloves
- 2 Tbsps olive oil
- 200 grams dried raisins
- 100 grams pitted black Olives
- 2 fresh bay leaves
- 1 tsp chopped rosemary
- 1 tsp chopped thyme
- freshly ground black peppers
- For the garnish
- 8 fresh bay leaves
- 4 small thyme
Preparation steps
Cut the dried cod into pieces about 8 cm (3 inches) long. Rinse well and then soak the fish pieces in water for 24 hours, changing the water every 6 hours.
Toast the pine nuts in a dry pan until golden brown. Pour into a cool plate and set aside.
Peel the garlic and mince. In a sauté pan, heat the oil and add the garlic. Sauté for about 2 minutes until golden. Add the raisins, olives, pine nut, and herbs. Season with salt and pepper. Sauté for 3 to 6 minutes. Meanwhile pat the cod pieces dry and coat with flour.
In a separate sauté pan, heat oil and butter over medium heat. Add the floured fish and sauté on both sides, about 5 to 8 minutes.
To serve, arrange the fish on warmed plates and top with the raisin-pine nut mixture. Granish with some fresh herbs and serve at once.
