- 2 duck legs (ready for cooking, about 350 g or .75 pounds)
- 2 Tbsps honey
- 250 milliliters Cider
- salt
- peppers
- 200 milliliters duck stock
- 3 red-skinned Apple
- 2 Tbsps lemon juice
- 2 Tbsps butter
Preparation steps
Rinse duck breasts and pat dry. Mix honey, cider, salt and pepper. Place duck breasts in the marinade, cover and let stand for about 1 hour.
Preheat oven to 100°C (approximately 200°F).
Remove duck breasts from marinade, drain, pat dry and cook skin side in a hot pan without adding fat until golden brown. Turn the meat over, cook for 1 minute and move to oven to bake for about 30 minutes.
Meanwhile, mix marinade with stock, bring to a boil and let reduce to half. Rinse apples, remove cores, cut apples into slices, then in half again and sprinkle immediately with lemon juice. Sauté briefly in a pan with hot butter, drain on paper towels and arrange on plates like roof tiles. Remove duck breasts from oven, let rest briefly, cut into slices and place alongside apple slices. Serve with sauce drizzled on top.
