- 7 ozs Red Lentils
- 1 bay leaf
- 1 garlic clove
- 1 shallot (finely chopped)
- 1 Tbsp White vinegar
- 3 Tbsps olive oil
- salt
- freshly ground pepper
- 9 ozs mixed Leaf lettuce variety
- 7 ozs Buttermilk
- 1 Tbsp lemon juice
- 2 Tbsps finely chopped parsley
Preparation steps

Place lentils in a sieve and rinse thoroughly under running water. Drain well.

Heat 1 tablespoon olive oil in a pan, add shallot and pressed garlic and sauté until translucent. Add lentils and bay leaf, sauté briefly while stirring, then pour in 600 ml (approximately 2 1/2 cups) of water, bring to a boil and simmer for about 30 minutes over very low heat. Drain and allow to cool.

Mix vinegar, and oil with the lentils and season with salt and pepper.

Rinse lettuce, trim and spin dry.
5.
For the buttermilk dressing, mix buttermilk with lemon juice, season with salt and pepper and stir in the parsley.
6.
Drizzle the dressing on plates and arrange the lettuce leaves and lentils on top.
