- 1 Tbsp vegetable oil
- 18 ozs Pumpkin
- 2 tart Apple
- 2 Tbsps lemon juice
- 6 ozs Pastry flour
- 1 tsp Baking powder
- 3 ½ ozs grated Cheese
- 3 ½ Tbsps vegetable oil
- 2 eggs
- 7 Tbsps milk
- 1 tsp salt
Preparation steps
step 1
Preheat oven to 350°F. Brush a baking sheet with oil.
Cut about 10 ounces of pumpkin flesh into pieces and spread onto baking sheet. Rinse apples, peel, quarter and core. Cut quarters into small pieces and place on baking sheet. Sprinkle with lemon juice. Bake for about 30 minutes or until pumpkin and apples are tender. Press together through a potato ricer into a bowl and let cool.

Grate remaining pumpkin pulp coarsely.

Mix flour with baking powder into pumpkin and apple mixture and sprinkle in grated pumpkin.

Add the cheese.

Add oil, eggs, milk and salt. Knead into a moldable dough, adding more milk or flour as needed.

Shape dough into a loaf shape and put on an oiled baking sheet.

Bake in oven until golden brown, about 1 hour. Remove and cool on a wire rack. Slice and serve.
