100 grams Pastry flour

100 milliliters milk (1.5% fat)

4 hardboiled eggs
100 grams cream cheese (double cream)
100 grams Feta
peppers
50 milliliters Whipped cream (min. 30% fat)
4 red onions
2 Tbsps soybean oil
1 generous pinch sugar
1 Tbsp Balsamic glaze
40 grams Parmesan
thyme (for garnish)

Preparation steps

Preheat oven to 200°C (approximately 400°F). Mix flour with salt and stir in milk. Whisk 4 eggs and stir into mixture. Place mixture on a small, parchment paper lined baking sheet and leave to set in the preheated oven for about 10 minutes. Remove from oven, turn out onto a wire rack, remove parchment paper and leave to cool.

Increase oven temperature to 220°C (approximately 425°F). Peel eggs and chop. Cut feta into pieces. Brush dough sheet thinly with cream cheese, sprinkle with eggs and feta, season with salt and pepper and roll up from the long side. Cut into two pieces and place them side by side in an ovenproof dish. Mix remaining eggs with cream, whisk together well, pour over the dough and bake until golden about 10-15 minutes in the oven.

Meanwhile, peel onions and cut into strips. Fry in oil with salt, sugar, pepper and season with balsamic sauce. Grate Parmesan very fine. Top strudel with Parmesan cheese, cut into strips and serve with onions and garnish with thyme.
