Preparation steps
Scrub potatoes thoroughly. Bring potatoes and about 3 1/2 cups of salted water to a boil in a pot, then cover and cook until knife tender, about 20 minutes.
Meanwhile, rinse broccoli, drain and cut into small florets.
Drain cooked potatoes, rinse well under cold water and peel while still hot. Place in a bowl and mash with a potato masher.
Heat the milk with 2 teaspoons salt and the butter in a small pot. Grate a little nutmeg into the milk and stir the mixture into the potatoes to combine.
To prepare the "nests," cut 4 squares of parchment paper (approximately 8 x 8 inches). Fold up the corners and twist firmly.
Spoon the potato puree into a piping bag and pipe it in a square shape within each parchment nest. Arrange broccoli on top.
Crack 1 egg for children and 2 eggs for adults and slide into center of each potato square. Season with salt and put on a baking sheet.
Bake in preheated oven at 425°F until eggs are set, about 15 minutes.
Place small dabs of tomato paste on top of potato puree and between the broccoli florets and serve.
