- 8 eggs
- 1 Tbsp Horseradish cream (from a jar)
- 2 Tbsps butter
- 4 Tbsps Whipped cream
- 1 Tbsp scallions
- 50 grams Caviar
- 75 grams Smoked salmon
- salt
- freshly ground peppers
- lemon zest (for garnishing)
Preparation steps
1.
Cut off top thirds of egg shells carefully (preferably with a serrated knife) and pour eggs into a bowl. Rinse egg shells and smooth the edges.

Mix horseradish with eggs and season with salt and pepper. Heat butter in a pan and cook eggs, stirring. Remove from heat and cool, stirring occasionally. Add 2 tablespoons of sour cream and chives (set aside some chives for garnishing). Fill eggshells with the mixture. Top with remaining sour cream, caviar and chives. Garnish with chopped salmon and lemon zest. Serve.
