20 grams butter
20 grams Pastry flour
250 milliliters milk
100 grams grated Emmentaler cheese

8 slices cooked ham
butter (for greasing)
3 Tbsps parsley (finely chopped)

Preparation steps

Preheat the oven to 200°C (approximately 390°F).

Rinse endive and remove stalk. Blanch in salted water for 3 minutes, shock in ice water and drain well. Heat butter in a pan Add flour sauté, then slowly add milk, stirring constantly. Bring milk to a boil, then remove from heat. Stir in emmentaler and season with salt, nutmeg and pepper.

Grease a baking dish with butter. Wrap each piece of endive with a slice of ham and place side-by-side in baking dish. Sprinkle with cheese sauce and bake for 15 minutes. Garnish with parsley and serve immediately.
