Ingredients

For the sausage
400 grams Ground beef
1 egg
½ tsp spicy Mustard
5 Tbsps breadcrumbs
salt

For the english muffins
150 grams Pastry flour
1 pinch sugar
2 eggs (separated)
220 milliliters milk
vegetable oil
For the scrambled eggs
4 eggs
2 Tbsps butter
For serving
4 slices Cheddar cheese

Preparation steps

1.

For the sausage: Mix the meat, egg, mustard and bread crumbs until smooth. Season with salt and pepper and divide into 4 equal portions. Shape into flat patties.

For the english muffins: Mix the flour, a pinch of salt, sugar, egg yolks and milk to form a smooth dough. Beat the egg whites with a pinch of salt until stiff and fold into the batter.

Heat a little oil in a pan and pour in the batter 2-3 tablespoons at a time to make 8 english muffins. Cook until golden brown, remove from the pan and keep warm in the oven at 80°C (approximately 175°F).

For the scrambled eggs: Mix the eggs, salt and pepper and pour into a hot pan with melted butter. Cook the scrambled eggs, stirring with a spatula.

5.

In another pan, heat 2 tablespoons of oil and fry the sausage patties on both sides until golden brown.

6.

For serving: Divide the scrambled eggs onto 4 english muffins, add a sausage, cover with a slice of cheese and place the remaining muffins on top. Serve immediately.
