Preparation steps
For the dough: crumble yeast and whisk with 3-4 tablespoons of lukewarm water until smooth. Sift flour into a bowl, add yeast, sugar, salt, oil and 1/2 cup of lukewarm water. Knead to a smooth dough which leaves sides of the bowl, add a little more flour if needed. Cover and let rise for about 1 hour in a warm place or until dough has doubled in bulk.
For the topping: rinse and quarter apples, core and cut into thin slices. Combine in a bowl with honey and lemon juice. Rinse leeks and cut into rings. Heat 1 tablespoon of oil in a pan and saute leeks for 2-3 minutes or until translucent. Remove from heat and season with salt and pepper.
Line two baking sheets with parchment paper.
Knead dough on a floured surface and roll out until 1/5 inch thick. Cut out circles about 6" in diameter. Cut out small pizzas from the remaining dough.
Place all pizza bases on baking sheets. Spread leeks on dough, leaving narrow borders free. Arrange apple slices in a fan pattern and crumble feta over. Season with salt and pepper, drizzle with remaining oil.
Bake in preheated oven at 425°F for about 15 minutes or until golden brown.
Remove from oven and garnish with basil. Serve.
