- 2 bunches scallions
- 300 grams small button Mushroom
- 150 grams Hedgehog mushroom
- 8 Sole fillet (each about 40-60 grams)
- salt
- freshly ground peppers
- Pastry flour (for dusting)
- 50 grams butter
- lemon juice (for drizzling)

Rinse scallions, dry and cut diagonally into rings. Clean mushrooms and halve large mushrooms.

Rinse and pat dry sole fillets. Season with salt and pepper, coat with flour. Heat butter in 2 nonstick pans. Saute mushrooms and scallions for about 5-7 minutes in one pan, stirring occasionally, and season with salt and pepper to taste.

Cook sole fillets in the second pan for about 5-6 minutes, turning over halfway through cooking. Arrange fish and vegetables on plates and drizzle with lemon juice to taste. Serve.
