- 2 Sole (filleted)
- 4 Lime leaves
- 2 cloves garlic cloves (finely sliced)
- 2 red chili peppers (deseeded and sliced)
- fresh Lime juice
- 4 Tbsps light soy sauce
- 2 Tbsps Fish sauce
- 1 tsp sugar
- 8 scallions (to garnish)

1 Large knife, 1 Small knife, 1 Cutting board, 1 große Non-stick pan, 1 Slotted spatula, 1 Measuring cups, 1 Tablespoon, 2 Plates
Preparation steps
1.
Heat the oven to 200ºC (180ºC fan) 400ºF, gas 6.
2.
Wash the sole fillets and pat dry then lay in a shallow non-metallic ovenproof dish. Scatter the garlic, chile and lime leaves over the fish.
3.
Mix together the lime juice, soy sauce, fish sauce, sugar and about 1/2 cup water and pour over the fish.
4.
Cover the dish with tin foil and bake in the oven for 10 -12 minutes or until the fish is just cooked.
5.
Serve in warm bowls with the scallions to garnish.
