2 Florida grouper fillets (about 180 grams each)
300 grams small potatoes
4 Tomatoes
2 Tbsps thyme
2 Tbsps scallions
1 garlic clove (finely chopped)
1 Tbsp Lobster butter
½ Orange (zested)
2 Tbsps olive oil
100 milliliters white wine
salt

Preparation steps

Rinse and halve potatoes. Blanch tomatoes in boiling water for a few seconds, then rinse, peel, quarter and remove seeds.

In a pot, combine potatoes, tomatoes, white wine, orange zest and garlic. Season with salt and pepper, bring to a boil and simmer about 20 minutes. 

3.

Rinse fish, pat dry and season with salt and pepper. In a pan, cook fish in hot lobster butter, 3-4 minutes per side. 

4.

Stir herbs into the tomato and potato mixture. Divide potatoes among warmed plates. Top with fish and tomatoes. Drizzle with lobster butter and serve.
