2 cups floury potatoes (peeled and roughly chopped)
2 Tbsps milk
1 ¾ ozs butter
2 cups canned Tuna (in oil)
3 scallions (finely chopped)
cayenne pepper
juiced Limes
4 Tbsps chopped parsley
flour (for dusting)
vegetable oil (for frying)
4 Tbsps Mayonnaise
2 handfuls mixed Leaf lettuce variety
12 cherry Tomatoes (halved)
cup Cheddar cheese cubed (optional)

1 Small skillet, 1 Bowl, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Fine grater, 1 Whisk, 1 Salad spinner, 1 Melon baller

Preparation steps

Boil the potatoes in salted water until tender then drain well and mash with the milk and butter.

Mash the flaked tuna into the mashed potatoes, add the spring onions, cayenne, lime juice and half the parsley then season with salt and freshly ground pepper.
3.
Shape the mixture into 8 patties and lightly dust with flour. Heat a little oil in a wide pan and fry the fishcakes for 3 minutes on each side or until golden brown.
4.
Top the fishcakes with the mayonnaise and the remaining parsley and serve garnished with the leaves, tomatoes and cheese, if using.
