- 1 egg yolk
- For the cookie dough
- 250 grams Pastry flour
- 2 egg yolks
- 100 grams ground almonds
- 50 grams Coconut flakes
- 3 Tbsps Mango syrup
- 1 Tbsp lemon juice
- 50 grams fine sugar
- 1 Tbsp Nut oil
Preparation steps
For the cookie dough, mix all the ingredients together and knead to a smooth dough. Wrap the dough in plastic wrap and let rest for 1 hour in the refrigerator.
Roll out the dough thinly on a floured surface between two sheets of baking paper.
Whisk 1 egg yolk with 2 tablespoons water. Cut out the circles from the rolled dough, put a folded piece of happiness paper in the center of each circle and brush the edges with beaten egg yolk. Fold the circles in half, press down the edges and press the corners slightly against each other.
Place the cookies on a baking tray lined with baking paper and bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) for 12 minutes. Remove the tray from the oven, allow the cookies to cool and remove along with the baking paper from the tray.
