Dough (makes 25 cookies)
250 grams Pastry flour
2 egg yolks
125 grams ground almonds
3 Tbsps Mango syrup
1 Tbsp lemon juice
50 grams fine sugar
1 Tbsp Nut oil

Preparation steps

For the fortune cookies: Place the flour, egg yolks, almonds, mango syrup, lemon juice, sugar and nut oil in a bowl. Knead until a smooth dough is formed. Shape into a disk, wrap in pastic wrap and refrigerate for 1 hour. Roll the dough thinly between 2 pieces of parchment paper on a lightly floured surface.

For brushing: Whisk the egg yolk in a bowl with 2 tablespoons of water.

Cut circles from the dough. Brush with the egg yolk mixture. Fold the circles in half and press the edges together. Shape into a crescent shape. Place on a parchment-lined baking sheet. Bake in a 200°C (approximately 390°F) oven for 12 minutes. Cool completely before serving.
