French Style Jam Cookies (Sables)
Ingredients
- For the dough
- 250 grams Pastry flour
- 50 grams ground almonds
- 100 grams sugar
- 1 pinch salt
- 1 pinch ground cloves
- 1 pinch ground cinnamon
- 1 pinch ground allspice
- 1 pinch ground Star anise
- 1 egg
- 200 grams butter
- Pastry flour (for working the dough)
- For the filling
- 150 grams Jam (such as raspberry, apricot, strawberry)
Preparation steps
Mix the flour with the almonds, sugar, salt and spices. Mound up on the work surface and make a well in the center. Beat the egg and pour into the well and distribute small pieces of butter around the flour. Quickly knead by hand to make a smooth dough, form into a ball and wrap in plastic wrap, then refrigerate for 30 minutes.
Preheat the oven to 180°C (approximately 350°F).
Roll out the dough on a floured work surface 0.4 cm (approximately 1/4 inch) thick and cut out circles about 3.5 cm (approximately 1 1/2 inch) in diameter. Cut out a small flower in the center of half of the dough circles and place all on a baking sheet lined with parchment paper. Bake in the preheated oven for about 12 minutes. Remove from the oven, remove the parchment paper from the tray and leave to cool on a wire rack.
Heat the jam in a small saucepan.
Spread the cookie circles with jam and cover with a flower cut-out cookie. Let set completely, then serve.
